Sea Urchin Production
Sea urchin (Paracentrotus lividus) production has been piloted here at BMRs for the last six years and our own brood stock have now been established. Currently, we have around 1000 urchins on site with a further 1000 in our sea cages. The urchins are grown in a flow-through system and are mainly fed Laminaria digitata. We are still selling our urchins with gonads large enough for human consumption to two Michelin star restaurants: Ichiho Ichi (cork) and the Chestnut (Ballydehob).
